Bochi is just our short way of saying Boneless Chicken, and it refers to our specially unboned and stuffed chicken wings. We take a chicken wing and unbone it whole from drumette to wingette. Separating bone from meat, the brine and marinade can work its magic on the tender wing meat. Don’t worry no bones are wasted, we used the leftover bones to make a bone broth soup and then all the leftover meat and cartilage for our Bochi tacos.
Real boneless chicken wings are served in various parts of the Asian world, particularly in Japan, Taiwan, Thailand, Cambodia, and Vietnam. In Taiwan, boneless wings stuffed with rice can be found in many night markets from street vendors. In some Thai restaurants, they are called Angel Wings and is often stuffed with vermicelli noodles and other ingredients. On the bochi truck they are called Bochi or Unboned Wings.
